Chilli Paste For Curry.

Roughly chop 3 chillies, thumbsized peeled ginger, 3 garlic cloves. Get tsp cumin seeds, tsp coriander seeds, 1/2 tsp cinnamon, 1/2 tsp turmeric, 3 TSP tomato paste, a pinch of salt, 5 grinds of black pepper, 3 TSP white vinegar. Chuck all ingredients into a blender and whir into a delicious chilli paste for any curry.

Chilli, Tomato and Basil Sauce.

Chilli, tomato and basil sauce is a must to cap off any pasta dish. Simply make the basic chilli sauce and then add finely chopped tomatoes. Tear some basil leaves into thin strips and bash out all the flavours with a pestle and mortar – add this to the already made chilli and tomato sauce and cook for a few minutes.
